Asian Chicken and Prawn Hotpot



If you follow me on Instagram you've probably seen me posting about this recipe a couple of times. Every time I post about it I get dozens of messages asking for the recipe so I thought I'd share it with you all today. The recipe is super quick and easy to make, it's also a great meal to make for anyone looking for healthier dishes to make.

Before I get to the recipe, to make this you will need a steamer. I purchased a 2 layer 10" bamboo steamer from an oriental food store but you can also get them online and in some supermarkets.



Ingredients ( Serves 4)

3 Spring onions
4 Large chicken breasts
600g Ramen noodles ( or medium egg noddles)
2 tbsp Mirin
5 tbsp light soy sauce
4  tbsp Sesame oil
6 Shiitake mushrooms
10 Chinese leaves
1 Litre chicken stock
2 Large carrots
Pak choi
300g prawns
3 pieces baby sweetcorn
Bean sprouts
1 tbsp Garlic granules

Method

The first thing you need to do before you start cooking is to wash your chicken and vegetables. Once you have washed everything slice all of your vegetables and lay them out onto the top tray of your steamer, then lay the prawns out on the first tray.

Combine 2 tbsp Mirin, 3 tbsp light soy sauce, 2 tbsp sesame oil to the chicken stock.

Place the steamer trays on top of each other, the tray containing prawns first and don't forget to add the lid, into a pan big enough for it to fit in ( I use an extra-large frying pan), pour in the chicken stock mixture and leave to boil on high heat for 20 minutes.

While the veg and prawns are steaming in the chicken broth, cut the chicken into small cubes and fry on medium heat along with 2 tbsp light soy sauce, 2 tbsp sesame oil, and 1 tbsp of garlic granules. Leave this to fry for 15 minutes, mixing regularly.

Once the chicken is cooking, prepare the noodles as instructed on the packaging. Take the noodles off boil 3 minutes early and add to the bottom tray of the steam, steaming them in the chicken broth for the remainder of the time needed.

After everything has finished steaming and cooking, combine the veg, chicken, prawns and chicken broth in a bowl and enjoy!
