Takeaway Style Pork Rice- For Picky Eaters

What you will need:
I'll start off by saying the recipe does involve meat but you can make a vegan/ vegetarian alternative by taking the cajun seasoning out taking out the oyster sauce of the recipe which it doesn't make a big difference in flavour.  
  • Coconut oil
  • 4 Pork Chops 
  • Peri Peri Seasoning (optional as its there to add a kick)
  • Soy Sauce Light
  • Oyster Sauce Light
  • Cajun Seasoning 
  • Paprika 
  • Salt and pepper seasoning (this is to add a kick, if you don't want it spicy)
  • Microwave Rice
The next lot of ingredients is completely optional and is just options of veg that goes really well in the dish
  • Spring Onions 
  • Carrots 
  • Celery Sticks 
  • Baby Sweetcorn 
  • Onions 
  • Mushrooms 
  • Peas
  • Peppers
If you're a fussy eater like me you can skip the onions and mushrooms, you could even skip the celery or the carrots the veg is optional you can add whatever veg you like. When it comes to the amount of seasoning I usually include two teaspoons of Paprika and two teaspoons of Cajun seasons and a couple of splashes of oyster sauce and soy sauce it really depends on personal preference. Ever time I make it I make it a little different but it always goes down a treat. 

Cooking
  • Mix all the seasoning into a bowl ready to put the chops into 
  • Cut all the fat off the chops and cut them into small strips.
  • Once you've cut the pork put it into the marinade and mix it, I usually leave it to sit for 5 minutes but you can just throw it straight into the pan once you've cut up the veg

                                   


  • While the pork is sitting in the marinade, chop the veg you have chosen into thin small pieces ( in the picture I chose to go simple with spring onions, carrots and celery cutting them thing allows them to cook a little more so they aren't as crunchy when served)


  • Line your pan with coconut oil ( the healthier option, any oils or sprays will do)
  • Fry your pork and veg together and include the marinade the pork was sitting in on a medium heat 
  • Once the pork is cooked add the microwave rice which only take two minutes to fry
  • Then serve! 
  • The best thing about this dish is that it's not only a really easy and quick dish to make but it's also great for freezing. I make this in bulk so that I can freeze it and my boyfriend takes it to work with him.
